Wife asked about the recall and they said it was too new and was not in the recall list. I am now thinking it could only be either the thermostat or the sensor so getting to the point of just telling Citroen to whistle and I will sort it myself, it's too much hassle having to travel miles and then having to leave car for the day because they won't give you a time slot just bring it in and leave it is all you get. Not very impressed with Citroen level of after care.

It is NOT normal for a gauge to go up & down to the extent described in your original post. "They all do that" is not the response you should be getting.
Reading between the lines, is the dealer you've gone back to the one you bought the car from. If so, maybe try another dealer - from my personal experience Citroen does have some very good dealers.

First time it was the original dealer but yesterday my wife called in to a different dealer, Evans halshaw at Hull and Doncaster. Gauge last night went to half way at a normal steady pace reaching half way after approx 3miles then wobbled a bit then dropped to just off bottom then it just stayed there, never moved after that travelled another 8 miles until I got home then when I turned the car off the gauge dropped another couple of mm to bottom.

No mate they are both Citroen dealers, I have got a new temp sensor on order so I am going to change that, I think it's more likely to be that than thermostat cos the readings on the gauge are to random and fast for it to be a true reading of the temperature of theft water, it can't go from 90 degrees to cold in a second then stay cold while driving at 60mph for ages.
