It's okay, I'm being a complete mong! What I was thinking was having the AC at the bottom with the double din above it

So on mine, you press the button on the end of the right stalk to cycle through avg mpg etc, can you still do this without the stock cd player?

You have to buy a steering wheel adapter loom how ever if you want the mpg on screen you need to press mode button on original radio to get that screen on before you take old radio out you can excess the menu but it's done a slightly different way but you do loose some features but that don't bother me has the other features has you can not scroll through the screens on dash like you can with original radio by pressing the mode button on radio so which ever one you have selected before you remove the radio thats the only one you can see

Hi people want to upgrade my dash do you know if I bought original touch screen and the dash to house it would it plug straight in as I’ve only got the older style dash?

I'm not sure if it's a straight plug and play swap if you get the newer touchscreen from a newer/higher spec DS3. The dash panel can be changed with some patience and persuasion, but I'm not sure if the wiring looms and connectors will be indentical for the upgrade.
