Ive been to a number of former Eastern Bloc countries and the problem is, outside the areas that cater for tourists, there is generally very little. Dublin and Barca for example are best enjoyed if you avoid Johnny tourist like the plague. Also come Oct/Nov it will be harry von Baltic in the East.
The Scandinavian countries are very nice but there isn't enough to do to fill 7 full days.

This was more than 10 years ago though. We stayed in a vineyard above Florence and went for a couple of days to Venice and one in Rome. I thought Florence was far better.May 2011 - October 2015: White body/black roof/white Bellone THP150

I went to Rome a couple of years ago. It's amazing city with so much to do, but don't go there expecting a relaxing break!

Granada, Andalusia, Spain is amazing.
We stayed with a view of the Alhambra. At Sunset it is incredible to watch the stones change colour. We visited the palace and had a wander around the gardens, very impressive with incredible 360 views from the top of the hill. Steeped in history, food was awesome and loads of little shops and restaurants to meander around.

We went in July and it was ridiculously hot, October would much better!
We had a Villa, so we would BBQ some fish from the markets and enjoy a beer in the garden then go for a wander in the evenings.
